Every January seven sake breweries from the prefecture come here to collect the yeast starter.
The temple, founded in 992, preserves in the diary Goshū no Nikki the description of a three-stage fermentation method with white rice that is considered the prototype of sake (Japanese rice wine) as it is made today. Every January the monks still make the bodaimoto, the yeast starter for the fermentation: seven sake breweries from the prefecture come to collect it for their own sake, which is also sold here, at the temple.
Shōryaku-ji is a Buddhist temple founded in 992 on Mount Bodai, on the outskirts of Nara. The annual January rite now brings together seven sake breweries from the prefecture, members of a research group devoted to this fermentation method, called bodaimoto.
ℹ️ You can buy the sake made with this fermentation method directly at the temple.
